Russian Borscht

borstchBorscht (борщ) is a Ukrainian  soup that is very popular in Russia.  It is made with beetroot as the main ingredient. Sometimes tomato is used as the main ingredient, while beetroot acts as a secondary ingredient. Other, non-beet varieties also exist, such as the tomato paste based orange borscht and green borscht . Potatoes and cabbage are also standard. The preparation of this tasteful authentic Russian  soup is really simple. Here is one of the ways to cook  this tasty soup.

Ingredients: 1 onion finely chopped, 1 grated carrot, 1 chopped sweet pepper, 2-3 finely chopped cloves of garlic, 2 potatoes, cut in thin slices, 2-3 beet-roots, cabbage, chopped dill or parsley, 2 tomatoes.

Fry onion, carrot, red pepper, garlic and dill/parsley in a frying pan. Chop beet and add it to the frying pan and cover with tomatoes (the more - the best) or some tomato paste.
Prepare meat broth and put potatoes in it. Chop cabbage and put it in the broth as well.
Let it boil and put fried vegetables in the broth. Then cook it for 15 min more. Add cream and enjoy your meal!
